Buffalo Cauliflower Wings

Still trying to maintain that new year's resolution? These cauliflower wings can help you stay on track but still have something delicious to eat!
INGREDIENTS

1 head of cauliflower, cut into florets
3/4 cup flour
1 teaspoon ground paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
3/4 cup buttermilk
2 tablespoons butter, melted
1/3 cup Buffalo Sauce (we used Frank’s!)

INSTRUCTIONS

  1. Preheat the oven to 375°F and line two baking sheets with parchment paper. Set aside.
  2. In a large bowl, combine the spices, salt, and the flour. Add the buttermilk and stir until combined. The mixture should be pretty thick!
  3. Add the cauliflower florets to the bater, coating each piece evenly in the buttermilk mixture. Place the coated cauliflower on the prepare baking pans, leaving room between each piece to the air can circulate around them.
  4. Bake for 20 minutes and then flip the cauliflower over to it’s other side to get an even bake. Bake for another 20 minutes on the other side!
  5. While the cauliflower bakes, make the buffalo sauce. Combine the buffalo sauce with the melted butter and whisk to combine.
  6. When the cauliflower is done, add the florets into the bowl the hot sauce mixture is in. Toss to combine and enjoy!

Hot Wings

You can't watch an important football game without hot wings!

Ingredients
4 pounds whole chicken wings
Oil for deep-fat frying
1/4 cup butter
1/4 cup honey
1/4 cup barbecue sauce
4 to 6 tablespoons hot pepper sauce
3 tablespoons vinegar
3 tablespoons prepared mustard
1/4 teaspoon garlic salt
Celery and carrot sticks
Blue cheese or ranch salad dressing

Directions

  • Cut wings into 3 sections; discard wing tip section. In a deep cast-iron or electric skillet, heat oil to 350°. Fry chicken wings, a few at a time, about 9 minutes or until golden. Drain on paper towels; place in a large bowl.
  • In a small saucepan, combine the next 7 ingredients; cook and stir 5-10 minutes. Pour over cooked wings; let stand 10 minutes. With a slotted spoon, remove wings from sauce and place them in a single layer on greased baking sheets.
  • Bake at 350° for 15 minutes. Serve hot with vegetable sticks and dressing for dipping.

Pull-Apart Pepperoni Cheese Bread

Ingredients:

1 tube pizza crust dough (such as Pillsbury)
1 cup marinara sauce
5 mozzarella sticks (use string cheese– NOT the reduced-fat type!)
2 TB butter
1 clove garlic, minced
24 pieces of pepperoni
sprinkle of grated Parmesan Cheese
  1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Open the tube of pizza dough. Unroll onto large cutting board or surface (I covered mine in parchment paper so it didn't stick.) Using a rolling pin, roll the dough out so it's thinner, without it being so thin that it breaks. Use the pizza cutter to make 3 cuts the long way and 5 cuts the short way to make a total of 24 pieces.
  2. Unwrap 4 of the string cheeses, saving one for the final step. Cut the four string cheeses into 6 equal pieces (for a total of 24 pieces.) Place a piece of string cheese in the center of each rectangle. Fold opposite corners and pinch closed, then pinch to seal the entire seam. Seal them REALLY well, otherwise the cheese will leak out and that would warrant a penalty flag.
  3. Place each ball SEAM SIDE DOWN on a baking tray lined with parchment paper in the following pattern: start with one middle row of 6 dough balls; offset a row of 5 dough balls on either side of the middle row so they are nestled in between the ones in the first row; offset a row of 4 dough balls on each of the outside rows in the same manner; You'll end up with 5 rows total, using all 24 dough balls.
  4. Place in oven and bake for 15 minutes. While that is baking, melt 2 TB of butter in a microwave safe cup and add in a clove of minced garlic to make garlic butter. In a small serving bowl, place about a cup of canned marinara sauce for dipping.
  5. When lightly browned, remove the cheese bread from the oven and immediately brush with the melted garlic butter. I used a silicone brush for this step.
  6. Place a piece of pepperoni on top of each cheese ball (the garlic butter ensures that it sticks!) Then, cut your remaining cheese stick so there's one long piece and three short pieces. Place on top so they resemble football laces. Sprinkle with Parmesan cheese.
  7. Place under broiler for one minute just to melt the cheese 'laces', watching carefully so it doesn't burn.
  8. Remove from oven, place on a platter and let rest for a moment until it's a tad bit cooler so you can eat it, and enjoy!
